½ medium yellow onion, finely chopped
¼ cup mayonnaise
2 Tablespoons yellow mustard
1 teaspoons apple cider vinegar
¼ cup sugar
½ teaspoon black pepper
¼ teaspoon cayenne
Salt and freshly ground black pepper to taste
If you feel a need to shred your own carrots and green/red cabbage go right ahead. I find the bags to be fresh, crispy and convenient. Some folks like a sweeter slaw. If you are one of them add another ¼ cup of sugar to the mix.
Stirred together the mayo, mustard, vinegar, sugar and spices, then tossed in the onion and cole slaw. Into the fridge for four hours or more. Be sure to toss this one more time just before serving to get all the creamy goodness into the slaw.
Try serving this on Pulled Pork sandwiches. Also works alongside Ribs, Brisket or any other smoked meat.
